Cranberry Miso Soup With Beef And Wakame
Serves 3
INGREDIENTS
1 tsp sesame oil
200g beef, cut into bite-sized pieces
3 cups beef stock
1 clove garlic, grated
½ tsp, ginger, grated
3 Tbsp white miso paste
3 tsp cranberry sauce
Salt and pepper to taste
3 tsp dried wakame seaweed, cut into 2 cm squares
½ cup chopped spring onion
METHOD
Heat oil in a large saucepan over medium-high heat, and cook beef slices. Add beef stock, garlic, ginger, miso paste, cranberry sauce and bring to a boil–skim off the scum on the surface. Season with soy sauce, salt and white pepper. Add wakame and simmer until the wakame softens. Sprinkle with spring onions and serve.
