Pork & Bell Pepper Fajitas with Cranberry Sauce

Makes 5 Wraps

5 whole wheat wraps
500g lean boneless pork, finely sliced
2 tsp garlic, finely diced
½ small red chili, diced
1 tsp olive oil
1 large or 2 small onions, sliced lengthwise
½ red bell pepper, sliced lengthwise
½ yellow bell pepper, sliced lengthwise
½ green bell pepper, sliced lengthwise
1 cup lettuce, shredded

For the Sauce
½ cup 100% cranberry juice
1 Tbsp red chili sauce
3 tsp corn starch
¼ cup water
1 tsp salt

Sauté garlic and chilies in oil for 1 – 2 minutes, then add onions and cook until softened. Add the pork and cook on high heat until its color changes; reduce heat and simmer until tender. Add the peppers and cook briefly. Mix the sauce ingredients separately, pour into the pan, and cook on high until the sauce thickens and coats the mixture. Spoon 3 Tbsp (or more) of the filling onto each wrap, add lettuce, roll tightly, heat on a pan, and serve.
