Cranberry Coconut Bites

Makes about 16 Cranberry Coconut Bites

1 cup almond flour
½ cup dried cranberries
½ cup shredded coconut
½ cup peanut butter
¼ cup honey
1 tsp vanilla
Pinch of salt

In a large bowl, mix the almond flour, dried cranberries, peanut butter, honey, vanilla, and salt until well combined. Chill the mixture for 15–20 minutes to firm up. Remove from the fridge, roll into bite-sized balls, and coat evenly with shredded coconut. Store in an airtight container in the fridge for an easy grab-and-go snack.
