Baby Spinach, Chicken, Walnut & Cranberry Salad
Serves 4
Ingredients
4 cups baby spinach
2 med chicken breasts (about 500g), cooked and shredded
1 bunch spring onions, finely diced
¼ cup parsley, finely chopped
½ cup dried cranberries
½ cup walnuts, roughly chopped
For the dressing (mix well)
¼ cup light soy sauce
2 Tbsp rice vinegar
1 Tbsp honey or gula melaka syrup
1 Tbsp sesame oil
2 cloves garlic, finely minced
1 (½ inch) piece fresh ginger, finely minced
METHOD
In a large bowl, combine spinach, chicken, spring onions, parsley, cranberries, and walnuts. Drizzle with dressing and toss gently to combine. Serve immediately or chill until ready to enjoy.
