Apple Cranberry Crisp
Serves 3
INGREDIENTS
2 large Fuji apples, peeled and sliced
3 Tbsp brown sugar
6 Tbsp dried cranberries
9 Tbsp quick cooking oats
6 Tbsp whole wheat flour
3 Tbsp olive oil
½ tsp ground cinnamon
¼ tsp allspice powder
METHOD
Toss apples with 1 Tbsp oil, 1 Tbsp sugar, and a pinch of cinnamon. Spread in an 8-inch microwave-safe dish. Mix remaining sugar, oil, cranberries, oats, flour, and spices. Sprinkle over apples. Microwave on high for 10–12 minutes until apples are tender.
