RED LENTIL CRANBERRY BREAD

Makes 10 Slices

1 cup red lentils (soaked in boiling water for 1 hour)
3 eggs
½ cup low-fat Greek yogurt
¼ cup olive oil
½ tsp salt
1 ½ Tbsp baking powder
3 Tbsp dried cranberries

Soak lentils in boiling water for 1 hour, then drain and rinse. Blend soaked lentils with eggs, yogurt, olive oil, and salt until smooth. Add baking powder and mix briefly. Stir in dried cranberries. Bake at 180°C in a pre-heated oven for 1 hour.
