Serves 8

1 kg pork belly

For the Sauce:
1 Tbsp hoisin sauce
1 Tbsp oyster sauce
1 Tbsp brown sugar
1 Tbsp honey
1 Tbsp light soy sauce
2 Tbsp 100% cranberry juice
2 Tbsp frozen cranberries

Mix all sauce ingredients together and bring the sauce mixture to boil. When the sauce cools, marinade the pork in belly in the sauce overnight. Next morning, roast pork belly at 180°C for 30- 40 minutes or until cooked and caramelised.
