Cranberry Lemongrass Iced Tea
Serves 2
INGREDIENTS
2 cups water
1 lemongrass stalk, roughly chopped
1 cup 100% cranberry juice
1 green lime, sliced into rounds
Ice cubes
METHOD
Bring water to a boil in a medium saucepan. Add lemongrass and boil rapidly for 5 minutes. Reduce the heat and simmer for another 5 to 10 minutes, or until the water is reduced by half. Strain and cool the lemongrass liquid, then refrigerate. Mix the chilled lemongrass infusion with cranberry juice. Shake with ice and serve with lime slices.
