Cranberry Almond Fudge
Makes 12 pieces
INGREDIENTS
½ tsp olive oil
1 cup dried cranberries
1 cup unsweetened white chocolate chips
½ (196g) can sweetened condensed milk
4 Tbsp olive oil
½ tsp vanilla extract
⅛ tsp ground nutmeg
½ cup almonds, chopped finely
METHOD
Lightly grease a 9-inch square pan with olive oil. In a microwave-safe bowl, combine chocolate chips, condensed milk, and oil. Microwave on high for 3 minutes, stirring every 30 seconds until smooth. Stir in vanilla and nutmeg, then fold in cranberries and almonds. Spread evenly in the pan. Cool until set (8 hours to overnight).
