Cranberry Teriyaki Chicken Skewers
Makes 8 skewers
INGREDIENTS
500g chicken breast, cut into cubes
¼ cup soy sauce
2 Tbsp cranberry sauce
2 cloves garlic, minced
1 tsp sesame oil
¼ cup cranberry sauce (for glaze)
1 tsp sesame seeds (optional)
1 stalk Chinese parsley, chopped, for garnish
METHOD
Mix soy sauce, cranberry sauce, garlic, and sesame oil in a bowl. Add chicken cubes, toss to coat, and marinate for at least 30 minutes (or overnight). Thread chicken onto skewers. Pan-fry for 8–10 minutes, turning occasionally until the chicken browns and is cooked through. Brush with warmed cranberry sauce during the last few minutes to glaze. Sprinkle with sesame seeds and parsley before serving.
