Cranberry Oatmeal Cookies
Makes 10 cookies
Ingredients
1 cup rolled oats
½ cup whole wheat flour
¼ cup dried cranberries
¼ cup brown sugar
2 tbsp white sugar
¼ tsp baking soda
¼ tsp cinnamon (optional)
Pinch of salt
4 Tbsp unsalted butter, melted
1 egg
½ tsp vanilla extract
METHOD
Preheat oven to 175°C.Line a baking tray with parchment paper. In a bowl, mix dry ingredients – oats, flour, cranberries, sugars, baking soda, cinnamon, and salt. In another bowl, whisk butter, egg, and vanilla until combined. Add wet ingredients to dry and mix until just combined. Scoop tablespoon-sized portions onto the tray, spacing slightly apart. Bake for 10–12 minutes until edges are lightly golden. Cool on the tray for 5 minutes, then transfer to a rack.
