Cranberry Broccoli Salad with Sesame Peanut Dressing
Serves 4
INGREDIENTS
1 large head broccoli, cut into little florets
1 large carrot, diced finely
2 stalks spring onions, diced finely
½ cup peanuts, roasted
½ cup dried cranberries
For the dressing
2 Tbsps white sesame seeds
1 Tbsp honey
¼ cup natural peanut butter
⅛ Tbsp sesame oil
1 Tbsp rice vinegar
1 tsp salt
1 Tbsp water
METHOD
In a large bowl, combine broccoli, carrot, spring onion, dried cranberries and peanuts. Pour dressing over the vegetables, toss to coat evenly, and serve.
