Cranberries Wholewheat Bread & Butter Pudding
Serves 4
INGREDIENTS
4 slices whole wheat bread
2 Tbsp olive oil
2 cup dried cranberries, chopped finely
2 egg yolks
4 eggs
1 cup low-fat milk
1/4 cup caster sugar
1 tsp vanilla extract
METHOD
Brush both sides of the bread with oil; cut into squares. Arrange in a microwave-safe dish, overlapping slightly. Sprinkle cranberries. Whisk eggs, yolks, milk, sugar, and vanilla. Pour over bread; press gently. Let soak for 10 minutes. Microwave uncovered on medium for 10 minutes, or until almost set. Optional: grill for 5–10 minutes at 180 °C until golden brown.
