Cashew Cranberry Brittle
Makes 8 pieces
INGREDIENTS
1 Tbsp olive oil
3/4 cup salted cashews, chopped
1/4 cup white sugar
1/4 cup dried cranberries
1/2 tsp vanilla extract
1/2 tsp baking soda
METHOD
Grease a baking sheet with ½ Tbsp oil. In a microwave-safe bowl, combine cashews and sugar. Microwave on high for about 6½ minutes until sugar melts. Stir in remaining oil, cranberries, and vanilla; microwave 2½ minutes more. Quickly stir in baking soda until foamy, then pour onto the baking sheet. Cool for 30 minutes; break into pieces.
